
| 2011 marks the first year in production at the Sippel Family Farm. As we build our flock, sheep milk cheeses will be in limited production. Over the next few years, we expect our flock to grow from its current 35 to 150 ewes. Until then, we will be transforming all of the precious sheep milk we can produce into cheese. We appreciate your patience with us as we build our flock of ewes. This year, we will be making one type of traditional farmstead sheep milk cheese. The cow milk we use comes from the Ruhl family, only 3 miles down the road. The cows are pasture raised and R-bst free, raised on a multi-generational family farm. The milk from this herd is high in butterfat and protein and makes delicious cheese. |
